It has been a long time since someone had written a recommendation about Sophia herself, as she mostly works in Studio 110 in Moncton. Now Moose Meat, I have had. The old family butcher once had some left over, and had made some sausage links out of it. From what I can remember, it was a little rough biting into it. I don't know if it's normally that way when cooked. The consistency wasn't all that bad from what I remember, but I think what really set it off from other meats, is that is definitely has it's own unique taste to it, as well as aroma. Mind you I haven't had something like that in well over a decade, but it definitely stands out in my mind.

I don't think I've ever had venison... how is it, compared to like, beef?
