Now his diet has never been all that good, living on a tight budget doesn't help either. I decided every Tuesday lunch hours will be our "cooking/shopping class" So that I can share some excellent veggie, lean and healthy dishes! Here is one of my fav's: Asian gluten free pasta salad! Brown rice gluten free spaghetti, fresh or frozen peas( if frozen just blanch them fast) raw broccoli, grated carrots, cashew nuts/walnuts grilled zucchini and/or eggplant You can add chicken, turkey, tofu or keep it veggie then make sauce.... sodium reduced soya sauce sodium reduced hoysin sauce grated ginger sesame oil orange grated peel. toss all together and chill for few min in fridge:) what else we got?
